Frying Oil Quality Control
Frying oil degrades during its prolonged use at temperatures above 180°C, resulting over time in the formation of carcinogenic derivatives.
French regulations stipulate that vegetable oil must be changed when its content of polar compounds is higher than 25 %. ~Beyond that, the oil is unfit for human consumption.
